Identifying Your Wild Mushrooms

Unsure of a mushroom's identity? Don't take any risks—we are here to help! Whether in-store or by email, our assessment will be much more precise if you provide a detailed description: a fresh specimen, clear photos, and a description of the surrounding environment.

On this note, we highly recommend downloading the mobile app La fonge – MycoQuébec—an invaluable field companion. The season is shaping up to be very fruitful, so caution is key!

Fire Morels in B.C.

In early June, we headed to British Columbia for the North American Mycological Association (NAMA) foray. On the agenda: absolutely divine gourmet feasts celebrating the morel and other mushrooms, but also a wealth of field learning—covering both the quirks of this fascinating mushroom and safety in remote forests. Black Trumpet Mushroom Jam 

It was during a North American Mycological Association (NAMA) banquet that we discovered this black trumpet mushroom jam, featuring caramelized onion, fennel, and Sherry vinegar—absolutely perfect on a cheese platter or in a gourmet burger. The recipe, taken from Chad Hyatt's book The Mushroom Hunter's Kitchen, is now available in our Recipes section and is a must-try to impress your guests!

Bound to the Oaks

You can recognize many mushrooms by the tree species they typically grow alongside. This makes it much easier to find the specific species you are looking for. For example, red oaks are easily recognizable by their lobed leaves with sharp points. Spot the oaks and beeches. Numerous symbiotic species gather at their base.

Among the best: precious American porcini mushrooms like this one harvested in Bergeronnes on June 25th, several kinds of boletes, black trumpets, hedgehog mushrooms, and Appalachian chanterelles.

Other highly prized non-symbiotic species decompose the wood of these trees: hen of the woods (Maitake, Grifola frondosa), chicken of the woods (Laetiporus sulphureus), and ubiquitous oyster mushrooms (Pleurotus ostreatus).

However, beware of jack-o'-lantern mushrooms (Omphalotus illudens), which form clusters on the ground with deceptive chanterelle-like colors. Fortunately, the pathogen responsible for oak wilt (Bretziella fagacearum), killing its host within a few weeks, seems to have stopped its northward progression at the Niagara Peninsula.

If you don't forage these delicious edibles yourself in the woods, you can find them dried and packaged at Mycoboutique, ready to be enjoyed after rehydration.
