Ingredients 0.5 lb (approximately 3 cups) of dry pasta (macaroni, fusilli, penne) - a whole wheat or spelt pasta will add additional fiber 2 tbsp olive oil 2 cups chopped onions 2 minced large cloves of garlic 0.5 lb sliced mushrooms 4 cups shredded or chopped cabbage 1 tsp salt 1 tsp caraway seeds 1 bunch of fresh spinach, chopped (kale can also be used) 2 cups cottage cheese 1/2 cup Greek yogurt 2 tbsp minced fresh dill (or 2 tsp dried) 2 cups grated cheddar cheese Ground black pepper, to taste Sprinkle of sunflower seeds (optional) Directions 1) Preheat your oven to 350 F and grease a 9x13 inch pan with olive oil. 2) Cook the pasta until just barely tender, then drain. 3) Heat the olive oil in a deep pot, then add the onions and saute for 5 minutes. Add the garlic, mushrooms, cabbage, salt, and caraway seeds. Stir, cover, and cook for ~ 10 minutes (when the cabbage is tender). Stir in spinach, remove from heat, and add the pasta. Note: if substituting kale for spinach, add this earlier to allow for more cooking time. 4) Stir in the cottage cheese, yogurt, dill, black pepper, and half of the cheddar. Spread into the pan, sprinkle with the remaining cheddar and a few sunflower seeds. Bake uncovered for 20-30 minutes, until heated through. Enjoy!
