Start growing morels!

Planting morel mycelium in your garden between September and the end of October allows the mycelium network to take root firmly in Quebec soil before the frost sets in. Winter cold will stimulate fruiting: as soon as the snow melts and the spring rains help, your first morels may well start to appear! Mushrooms nestled in moss

Summer is drawing to a close: the trees are rolling out the red carpet for the stars of the culinary world. Almost all of them make an appearance at this time of year. In particular, you’ll come across several species, camouflaged in the moss on the ground.

Two of them are particularly appealing and have already started to fill our excursionists' baskets. If you spot either of them, the patch will not be far away.

Found beneath conifers, the burnt-sugar milk cap needs no introduction: when dried, it adds a wonderful aroma to your dishes (as our maple-flavoured ice creams attest). Nicknamed the ‘Candy Cap’, this milk cap deserves an Oscar for its aroma.

Although less well-known, the grayling mushroom is nonetheless a contender for its flavour and texture. With a more subtle aroma – some say it smells of cucumber – this greyish-capped mushroom is a culinary delight with no doubtful look-alikes. It is delicious simply pan-fried while fresh.

Underground fungi encircle the Earth with their filaments. These hyphae transport water and nutrients between themselves and plants. Among these species, some do not produce any visible structure, such as a cap. This form of symbiosis, known as arbuscular mycorrhiza, is an essential link in the chain of life.

Through sampling, their scale has been precisely assessed: the total biomass of these fungi is five times greater than that of the entire human population. What’s more, if laid end to end, their filaments would span the distance round trip to Proxima Centauri, the star closest to us.
