So many names to remember

Wild or Cultivated Morels

To date, 75 species of morels have been identified—belonging either to the black morel lineage (Morchella elata) or the yellow morel lineage (M. esculenta).In Quebec, seven identified species belong to the former group and two to the latter, both equally prized for their culinary value.

The Perched Turtle

As early as May, in the North Eastern forests, turtle mushrooms (Cerioporus squamosus) begin to attach themselves to dying or dead hardwood trees.Their beige cap, covered with dark scales, resembles a turtle shell—hence the nickname.

Common and early to appear,  they give off a subtle watermelon scent.A good edible when young and tender, those meaty mushroom are best enjoyed marinated—before their flesh toughens.

Lichens cover around 8% of the Earth’s surface in a wide variety of patterns and colors.They are composed of fungi surrounding green algae or cyanobacteria.Through photosynthesis, the algae or cyanobacteria produce polyols and glucose, which they provide to the fungal partnersi.In return, they receive water, minerals, and protection from UV rays.

With over 20,000 species, lichens are essential to life.They enrich the soil, fix nitrogen from the air, and provide food and shelter for animals.Though low in nutrients, lichens have often helped humans survive famine.
